Living Without Type 1 - Post 4


Quinoa, Kale and Figs are in season this month. Kim Brown at Living Without Type 1 has created a few recipes that are healthy and easy to put together.


Quinoa Oatmeal
In a saucepan over medium high heat mix 2 cups of almond milk and 1 cup of rinsed golden quinoa.  Stir together, cover, turn to low heat.  Let it cook on low for about 10-15 minutes or until quinoa has soaked up all of the almond milk, has split and is tender.  Sweeten with cinnamon, raw honey, stevia, or agave.


Kale Salad
Chop 1 bunch of kale, add 1/2 red onion. Drizzle 3 Tablespoons of balsamic vinegar, 1 Tablespoon of olive oil, add salt and pepper to taste. 

Walnut Crackers with Date Spread
Walnut Crackers
3 cups blanched almond flour
1½ teaspoons celtic sea salt
1 cup walnuts, chopped
2 eggs, whisked until frothy
2 tablespoons grapeseed oil
In a large mixing bowl, stir together almond flour, salt, walnuts, eggs and oil until well blended
Separate dough into two halves
Line two large (12 x 16) stainless steel baking sheets with parchment paper
Place one half of the dough in the center of each lined sheet
Cut another piece of parchment paper and place it over one of the balls of dough
Roll dough out between the two pieces of parchment paper, until it is ⅛ inch thick and covers the entire baking sheet; remove top paper and repeat process with the other piece of dough
Cut the dough with a knife or pizza cutter into 2 inch squares
Bake at 350° for 10-12 minutes, until golden brown
Cool and serve
Date Spread
3 oz. of goat cheese and 7 large Dates.  Pulse together in a processor and spread over walnut crackers.

Jicama is a sweet, crunchy and healthy snack for kids. Great source of fiber, potassium, iron, calcium, and Vitamins C and E. Cut into long french fries and baggy for a snack on the go.

Hard boiled eggs are another simple easy snack that can be prepared in advance and grab on the go. Wash them down with some yummy lemonade sweetened with liquid or green stevia.
Jaxon was a great little helper, peeling the eggs and juicing lemons with his itty bitty hands.
