Living Without Type 1 - Post 2




Guacamole

fresh avacados
sea salt
lemon juice





Black Bean Burgers
(Taken from The Gluten Free Almond Flour Cookbook www.elanaspantry.com)

3 Tablespoons grapeseed oil
1 medium onion, coarsley chopped
5 cloves of garlic, thinly sliced
1 med. red bell pepper, 1/4 inch cubes
2 cups black beans, cooked
2 tsp. sea salt
1 T. ground cumin
1 tsp. ground chipotle
1/4 c. minced fresh cilantro
3 large eggs
1/2 c blanched almond flour

Heat 1 T. of grapeseed oil in large skillet over medium heat. Saute the onion for 8-10 minutes then add the garlic and bell pepper and saute for 2-3 minutes more, until softened.
In a large bowl, combine onion mixture and all other ingredients. Form the mixture into 2-inch patties. Heat the remaining 2 T. of grapeseed oil in large skillet over medium-high heat. Cook the patties for 4-6 minutes per side, until browned on the edges. Top with sautéed onions.
